Keto Zucchini Boats – Low Carb Recipe
In the mood for a low carb dinner? Look no further! Keto zucchini boats are an excellent meal option if you’re looking for something fairly quick and easy to make. With just three net carbs in a medium-sized zucchini, the keto stuffed zucchini is a must-have on your diet plan.
There are tons of zucchini recipes out there but, you have to try my low carb zucchini boats. They are super tasty and incredibly versatile as you can fill them with a range of goodies to fit your preference. For this recipe, I decided to use minced meat as the main ingredient, alongside onion, flavorful condiments, and of course, cheese. However, if you’re in the mood for add ons, why not try bell peppers and mushrooms?
Are zucchini boats keto?
Yes! And the best thing of it all is the amazing dishes you can make using zucchinis? Fancy pasta on keto? Try tasty zoodles, a great pasta substitute. Craving roasted food? Make yourself a keto cheeseburger with a side of zucchini, or even better, zucchini fries.
Ingredients
- 6 medium-sized zucchinis (or 3 large ones)
- 1 pack ground beef
- 1-2 cups tomato sauce
- ½ onion (diced)
- 1 tsp dried oregano
- 1 tsp salt
- 1-2 cloves garlic
- 1-2 cups of cheddar cheese
- 1 can tomato sauce (or )
- Black pepper (optional)
- 1 tsp parsley, chopped (optional)
Zucchini Boats Recipe Instructions
- Preheat the oven to 390 Fahrenheit/200 Celsius.
- Wash the zucchini and slice it in half longways. Scoop out the flesh, set it aside (you’ll need it for the filling later), and place the zucchini halves on a sheet pan.
- Heat oil in a large pan or pot over medium-high heat. Add onion and garlic and cook for a few minutes before adding the ground beef. Once the beef has turned brown, add dried oregano, salt, pepper, tomato paste, and tomato sauce and stir.
- Add the zucchini filling and stir for a few minutes before placing a lid to allow it to simmer. After 5 minutes, turn the heat down to low and allow the filling to simmer for an additional 10 minutes.
- Using a spoon, add the beef filling on top of the zucchini and top it off with grated cheese. Add as much cheese as you would like. Bake it for 20-25 minutes.
- Garnish with parsley.
