This keto queso recipe is the perfect low carb appetizer! Whether you need to make a holiday party appetizer or you just want a game day snack, you’ll love this ultra-rich cheese dip.
- 2 tbsp butter
- 1/4 cup diced onion
- 1/2 cup heavy cream
- 2 ounces cream cheese
- 2 cups shredded cheddar cheese
- 10 ounce can Rotel tomatoes & chiles drained
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp cumin
Heat butter in a medium pot over medium heat. Add the onion and cook for 3-5 minutes, until tender.
Add the heavy cream, cream cheese, and cheddar cheese. Stir frequently until the cheese is melted and well combined (about 2-4 minutes).
Add the can of drained Rotel tomatoes and chiles, salt, pepper, and cumin. Stir and cook for a minute or two until everything is warm and well combined.
Serve with sliced celery, keto chips, pork rinds, or over chicken/steak. Enjoy!
This makes a thicker, chunkier queso. If you prefer a smoother queso, you can either increase the amount of heavy cream and/or you can use just a small can of green chiles instead of the full can of Rotel.
