Keto Marshmallows – Homemade Sugar Free Recipe

Are you a lover of marshmallows but have no idea how you can enjoy them while on a keto diet? I have a quick solution for you – keto marshmallows. My sugar-free marshmallow recipe is perfect as the sugar-free marshmallows are virtually carb-free, unlike traditional marshmallows. Here’s how you can make your own low-sugar marshmallows!

How many Carbs in marshmallows?

According to the United States Department of Agriculture, a 50-gram cup of marshmallows has 40.6 grams of carbs and 28.8. grams of sugar. This is too much when you are on a keto diet since the whole point is to reduce your carb intake and replace it with fats.

These easy-to-make keto marshmallows can be made with just three ingredients and have the same texture and flavour as traditional marshmallows but without high-carb and unhealthy sugar.

How to make sugar-free keto marshmallows

Keto Marshmallow Ingredients

  • 2 tbsp of gelatin powder (unflavored)
  • 1 cup of warm water (divide it into two)
  • 3 cups of Allulose sweetener, add extra for dusting

For blending

  • ¼ tsp of salt
  • 2 tsp of vanilla extract

Keto Mashmallow Instructions

  1. Place the parchment paper on an 8×8 pan and set it aside.
  2. Pour ½ cup of warm water into a large bowl. Then gently sprinkle the gelatin on the water and start whisking.
  3. In another bowl, add the remaining water, sea salt and powdered sweetener and mix well.
  4. Pour the mixture into a saucepan and heat it on medium heat for a few minutes. Continue stirring until the mixture is hot. Keep mixing until the sweetener dissolves – you don’t want it to boil. The color will no longer be opaque but slightly translucent. Remove the mixture immediately once bubbles start to form at the edge.
  5. Once you have removed it from heat, stir in the vanilla extract. Then pour the hot liquid into the bowl mixed with gelatin, and continue whisking using a hand mixer on high power for about 10 minutes. Mix until you have a fluffy mixture that has doubled in volume. Keep in mind that the mixing time could take longer depending on how powerful your hand mixer is or how big your bowl is.
  6. Now transfer the marshmallows to the pan
  7. Refrigerate for at least 9 hours or overnight until you notice the marshmallows are firm and no longer sticky. Use a sharp knife to cut the marshmallows into squares.
  8. You also have the option of sprinkling cinnamon on top of the marshmallows.

Are marshmallows keto-friendly?

Traditional marshmallows are made of pure sugar and corn syrup, which is not keto-friendly. To make keto marshmallows, you will have to avoid using corn syrup.

Can I use a different sweetener?

You can also use powdered erythritol or vanilla stevia. The powdered erythritol gives the marshmallow a finer consistency, although it might take some time to crystallize.

Can I store the marshmallows?

Yes, you can store these marshmallows. So you can make them and store them in advance.

Can I roast the keto marshmallows?

When you’ve made the sugar-free marshmallows, cut them into small squares and leave them to harden a bit before roasting them. Place them on a stick and roast on an open fire.
