Low Carb Granola – Keto Recipe

This keto granola recipe has everything you would want in a bowl of breakfast cereal on a keto diet: Our granola is low-carb, it’s crunchy, sweetened just right, and delicious in taste. You may eat it on its own, mix it with low carb yoghurt, or make keto granola cereal by mixing it with milk and fresh fruit.

Personally, I love our keto granola! It’s one of my go-to breakfast choices, as it’s incredibly light yet is packed with nutrients. Not to mention, it keeps me full without making me feel heavy. This low carb keto recipe is very easy to follow and can be completed in as little as 30-45 minutes, with much of that time spent waiting!

Ingredients needed for this low carb keto granola recipe

  • 1 cup almonds, sliced
  • 1 cup flaked unsweetened coconut
  • 1/2 cup walnuts, chopped
  • 1/3 cup of pumpkin seeds
  • 1 egg white
  • 1/3 cup sunflower seeds
  • 1 cup pecans, chopped
  • 1/4 cup fruit sweetener (preferably golden monk)
  • 1 tsp cinnamon powder
  • 1 tsp fine sea salt
  • 1/3 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/3 cup sesame seeds (optional)
  • 2 tbsp hemp seeds (optional)

How to make keto granola

  1. Preheat the oven to 350°F and prepare a baking sheet.
  2. Combine all the nuts, seeds, coconut, sweetener, cinnamon, and salt in a large mixing bowl.
  3. Whisk together the melted coconut oil, egg white, and vanilla extract in a separate bowl.
  4. Pour the liquid over the nut/seed/coconut mixture and whisk until everything is well mixed. Spread the mixture onto the prepared baking sheet in an equal layer and flatten with a spatula or your hands.
  5. Bake for 25–30 minutes, or until golden brown, flipping pan halfway through. Be careful not to stir the granola while it’s baking.)
  6. Allow the pan to cool after removing it from the oven.
  7. Let it cool in the baking tray for 5-10 minutes.
  8. Time to enjoy your crispy, delicious, and filling sugar-free keto granola.

Customizing your keto Granola recipe

For this recipe, don’t forget the coconut oil (or plant-based butter if you’re using that), as it gives this keto granola recipe a richness that helps balance out the flavors. It also serves as a glue that holds all of the other ingredients together. Add some fresh berries or keto chocolate chips to this homemade keto cereal to make it even better.

How to store your keto granola

Unless you plan on eating the entire granola cluster in one sitting, store it in an airtight container in a cool, dry location.
